In celebration of the purchase of my new oven and the return of fresh chicken to Singapore, I cooked Nigella Lawson's unbelievable easy and very delicious Slow-Roasted Garlic and Lemon Chicken for dinner. I forgot to buy thyme so I used oregano in the dish and strewed chopped parsley. The chicken still taste great and I think therein lies the beauty of Nigella's cooking. She does not believe in following recipes slavishly thus her recipes tend to be forgiving in terms of measurements and ingredients. That suits me very well.
Oh oh, take a look at my new oven. Isn't it beautiful? See how spacious it is, the 10 inch pie dish looks so tiny inside the oven. Best of all, the oven heats up so quickly, no preheating is required.
Found a third cause for celebration when I took a sip of the Jacob's Creek 2003 Riesling which was used to cook the chicken. The wine is nicely balanced, tasting of ripe citrus and honey. Truly a value for money wine from Jacob's Creek which is known for its cheap, mass market varietals. I liked the Riesling so much we drank it for dinner with the chicken. It's a match made in culinary heaven, lemony chicken with lemony wine. I am going to stock up a few more bottles of the Riesling the next time I go to the supermarket, I read that it goes really well with seafood too.
Hi ST, I had steamed kampung chicken with pasta last night and we were just going hmmm. Your chicken dish looks really good, I will definitely try it one of these weekends, can't see any 2 hr window to cook weekday dinner in the weeks ahead.

Hi ST, very strange indeed. I just had Jacob's Creek Riesling a couple of days back. Used half of it to stew some chicken, and the balance for some pasta sauce. Costs about USD20 here.

Hi FatMan, thanks for visiting my blog. Are wines expensive in Korea? I always thought wine prices in Singapore are on the high side. I bought that bottle of Riesling for USD12. In Oz, the same bottle of wine will most likely only cost me USD7.
Hi julia, the oven is a Rowenta Gourmet 28 litre, big enough to roast a duck but not a turkey. It has oven, grill and rotisserie functions and digital time display. Are u looking to buy a new oven too?

HI ST, normally I don't really flavour the chicken, maybe just a bit of salt and white pepper. The kampung chicken has great flavour in itself.
I also wanted to say I made the same chicken dish as yours for lunch today, and it was a hit with everyone at the table. So effortless, I am inspired to cook like this more often, i.e. slow roast chicken with a little liquid and flavoursome vegetables, maybe some lemons and prunes a la Middle Eastern, there are still 2 lemons left.

Hi umami, its so easy yet impressive isn't it? Another family favourite is a Chinese style one using shaoxing wine and light soy. Let me know how your lemon and prune version turns out, it sounds delicious.
